What I saw there stopped me in my tracks. The difference between Will's land and the conventional farmland next door is something you have to see to believe. Same rain, same day, and the water running off his neighbor's acreage looks like a strawberry milkshake while the water running off Will's land is clear enough to drink. That's soil health you can actually see with your own eyes, and once you see it you can't unsee it. In the last 150 years we've lost nearly half the world's topsoil, the living layer of earth that all of human agriculture depends on. Will took his land from half a percent organic matter to five percent, a tenfold increase, and in doing so he's shown that this damage can actually be reversed. When industrial agriculture moved in, it hollowed out small towns across America, and Bluffton is one of them. It sits in what was the poorest county in the entire United States. Will went from 3 or 4 employees to over 160, buying up old buildings, restoring the town, feeding the community, and proving that decentralized regenerative agriculture can heal the soil and bring a place back to life at the same time. As someone who's spent my career restoring old buildings, I see what Will is doing through that same lens.
