A top bit of Lillian for an acting legend. We’re delighted to welcome East London-born Ray Winstone to Dish. Since Scum in 1979, Ray has starred in Quadrophenia, Sexy Beast, The Departed and Nil By Mouth, among many others. Ray has a strong connection to Sicily, where he spends time at his Italian retreat, growing fruit, vegetables and nuts, and making his own olive oil. He chats to Angela about Sicilian life, his sweet tooth, love of rib of beef and slow-cooked meats, and the joy of sharing sloppy pig trotters with pals. Angela serves pan-fried Dover sole with buttery capers and shallots, Jersey Royals, green helga beans and homemade focaccia for mopping up the juices.
