He believes that top-tier, mission-based restaurants have the power to shift cultural perceptions of plant-based food.

“I believe 11 Madison Park because of its stature because of what this move represents. And because of what Daniel imagined and is now creating is well-poised to forever change the restaurant industry. And also how people think about what plant-based cuisine is and can be.”

He maintains that plant-based ingredients allow for a limitless creative palette and provide a way to cook that is liberating and exciting.

“But what I've learned is that by letting go of these things today, I feel so liberated in a way that I never thought was possible. As a chef, I'm more excited than I've ever been. And I feel my palette of ingredients has only grown because before, in a way, we were stuck with these things”
