My first LIVE 3-2-1 recipe for Jan 2021 is Veggie Red Curry! Each recipe throughout Jan uses the 3-2-1 formula 3 fruit and veg per person 2 servings per recipes 1 pan is all you need! This is healthy eating at its easiest and most delicious: 1 tbsp olive oil or coconut oil 2 garlic cloves, minced 1 large onion, chopped 5 cm piece of ginger, peeled and grated 3 tbsp red Thai curry paste 1 Veg stock cube 100 ml water 400 ml coconut milk (1 tin) 200 g broccoli florets or tenderstem, chopped 200 g red peppers, sliced 1 tbsp peanut butter 160 g spinach, chopped 2 tbsp soya sauce Juice of 1 lime 2 spring onions, chopped, to finish 10 g fresh coriander, to finish 20 g peanuts, to finish Heat 2 tbsp of oil in a large size pot over a medium heat, add the garlic, onion and ginger and cook for 2 minutes until golden. Add the curry paste and simmer for 1 minute until fragrant. Dissolve the stock cube in boiling water and add the vegetable stock together with the coconut milk to the curry paste mixture, then add the broccoli, peanut butter and red peppers. Cook for 15 minutes, until the vegetables are soft. Stir occasionally and top with water if needed. Add the spinach at the end and cook for 1 more minute. Remove the curry from the heat and season with soya sauce and the lime juice. Garnish with spring onions, coriander and crushed peanuts.
